Foodie Fix: Super Succulent Salad

I LOVE  a good salad, but... only if I fill full after.  I am soooo done with picking up those "healthy"
salads from M&S which leave you feeling like all you've eaten is the dust from your Nokia 3210.




So here is my fave recipe for a super healthy and FILLING lunchtime salad!

Ingredients:
1/4 Organic Red Pepper: Brockley Farmers Market

1/4 Cup Tricolore Quinoa (Gives the salad a more nuttier
taste than white Quinoa and adds the stodginess
which will keep you feeling full): Sydenham Wellbeing
4 Table Spoons (of each) Balsamic Vinegar and Extra Virgin Olive Oil 
Organic Spinach: Brockley Farmers Market

6X Organic Brown Tomatoes: Brockley Farmers Market

1/2 an Avocadoooooo

Boil your quinoa for roughly 20 minutes then leave to cool for an 1 hour. Add Spinach to a bowl and all other ingredients (cut diced) with a tiny bit of pink sea salt and black pepper then mix. Once this is mixed together pop in your cool quinoa and give it another quick mix before adding the balsamic vinegar and olive oil and Voilaaaaaaaa - healthy eating that doesn't leave you hungryyyy :)
